Christmas dinner at our house is always ham. And by always I mean that there isn't a question. There will be no changing. No deviation. Just ham.
Generally that means there are leftovers. And this year some of those leftovers made it into one of the tastiest breakfast casseroles I have ever had the pleasure of eating.
And I've found a recipe that will forever be the "Morning-After-Christmas Breakfast Casserole".
- 4 slices of bread, cubed
- 12 eggs
- 1 cup low fat sour cream
- 3 green onions, chopped
- 1 pound spiral sliced ham
- 1 cup low fat milk
- 1 cup grated cheddar (or more thank.you.very.much)
2. Cut ham into strips or cubes. Cover bread cubes with ham.
3. In a large bowl, beat eggs, milk, and sour cream until smooth. Stir in cheese and onions.
4. Pour mixture over ham.
5. Bake uncovered at 325 for 45 minutes (or until a knife inserted in the center comes out clean). Let stand 5 minutes before serving.
And since Christmas is...well, a long time away, this may have to make a special appearance again on someone's birthday...or holiday...it's just too good to only have once a year!
Totally just marked this down.. we always have ham as well.. and there is always leftovers! Looks delicious!
ReplyDeleteThat looks simply scrumptious.
ReplyDeleteThat's almost exactly what I make for Christmas morning breakfast every year. I put it all together the night before and pop it in the oven as soon as I get up. Then it's ready to eat just about the time presents are all opened. :)
ReplyDeleteTotally wish you'd posted this earlier in the week. I used the last of my leftover Christmas ham in yesterdays mean plan.....sigh.

Yummo! I will have to give that recipe a try!
ReplyDeleteThanks for stopping by . . .
I too love my Longaberger bowls - my kids usually do pretty well with handling them. Sometimes I cringe when they carry them to the counter after eating.
I saw this in my feeds and started drooling! I love eggs in any form
