These little burgers were so fun to make and as a bonus they made one little birthday girl very happy. McKenna's dinner wish was mini-cheeseburgers. Typically, I have taken the wonderfully easy route of the Costco freezer section to ease the birthday load.So I was NOT happy to find out that they don't carry them anymore. I was forced to make them by hand (gasp!). But I did figure out a way to make the burger process much easier.
Here's what you'll need to get:
- pack of 24 biscuits (I used Wonder homestyle Enriched biscuits)
- 2 lbs of hamburger
- 1-2 eggs
- 1/3 cup breadcrumbs
- 1-2 Tbsp. ground flax seed (optional)
- 8 cheese slices
- sliced bread and butter pickles
Mix the 2 lbs of ground beef with 1-2 eggs and add in about 1/3 cup of bread crumbs (I usually use 2 pieces of our bread, break it into pieces and chop it up in our coffee grinder along with 1-2 Tbsp. of flax seed - sounds crazy, but it's great!).
Press the meat mixture into a baking dish (I use my Pampered Chef large bar pan). Once the mix is pressed in evenly to the pan, use a large spatula to evenly divide/score the meat into 24 squares. It makes it easier to separate the burgers if you make the marks in the meat now.
Bake the burgers at 350 for 25-30 minutes. While the meat is cooking, divide each cheese slice into fourths. After you remove the mini-burgers from the oven, drain the pan, top with a piece of cheese and a pickle slice and serve on a bun.
I'm telling you - they are very cute and get gobbled up!
